Pure & cleanThe philosophy of our natural wine is based on "nothing added, nothing taken away."It is a movement that emphasizes minimal intervention in both the vineyard and the cellar, prioritizing organic farming, spontaneous fermentation, and the pure, unfiltered expression of the grape and its specific environment (terroir) over standardized, mass-produced flavorsBeside the nature, the intention and energy of the people involved in the process are very important.

My name is Dimitar.
In 2016 I did for the first time!
Just grapes, me, passion and love!The result was nothing that I have ever tasted and everything I wanted to achieve.Simple and powerful -
the first MINIUM was born!

After my initial steps into the world of natural wines, I realized I was reaching my physical and time-related limits.
That is why my "one man show" evolved into the "Natural wine fellows" team.Dimitar, Iwan, .... and StanimirWe craft our natural wines to make terroir—the unadulterated character of the soil and the grape—authentically perceptible and in harmony with nature. Naturally, we eschew artificial additives, fining agents, and filtration in order to create unique, artisanal, and vibrant wines that stand apart from industrial uniformity.

Terroir
Our organic vineyards are located in one of the most favourable in soil and climate regions in Bulgaria – Plovdiv plain which is part of the Upper Thracian Plain.
The main colour of the soil is dark maroon red. In terms of climate, the region belongs to the Transitional continental area. The temperature regime is characterized by open winter and hot summer.
The average annual temperature of the air is 12,3°C. The duration of frost-free time averages 210 days. The average annual rainfall is 565 mm. The region enters the zone of the longest period of sunshine, which annual average is 2293 hours.
Under these conditions in July when the grapes ripen it is sunny average of 10 hours a day. The conditions are perfect for receiving a raw material necessary for quality wine indicators and gathering the grapes at full technological aging.

Location
Our vineyards and the winery are located between the village Popoviza and the small town Parvomay, close to Plovdiv.
Plovdiv is Bulgaria's second-largest city and one of the oldest continuously inhabited cities in Europe, with over 8,000 years of history.
